In Rome, this style of pizza is made in rectangular pans and is usually cut into slices with scissors and called “Pizza al Taglio”.

Ours is cooked at 700 degrees and includes 70 hour cold-fermented dough with crisp crust and char. It is easily digestible and all are made with 60 day aged mozzarella and provolone and extra virgin olive oil. The special wheat in our dough contains both local spelt and Manitoba hard wheat.
